Thai Massaman Curry Recipe

I have been making this Thai Massaman curry for many, many years.  I am sure I started out with a recipe from a book but over the years I have modified this recipe to what it is today.

INGREDIENTS
*2 trays of oyster blade beef (or similar steak for slow cooking) - cut into good sized chunks
*2 onions diced
* Spices: dried shallots, cinnamon powder, cumin powder, Chinese 5 Spice powder, cardamom powder, cloves powder.
* 210g jar of Massaman Curry Paste - I prefer the Valcom brand
* 1 tablespoon red curry paste - I also prefer the Valcom brand - you can add more of this paste if you like more heat to your curry
* 1-2 tablespoons tamarind purée
* 1-2 tablespoons oyster sauce

* 2 heaped tablespoons of peanut butter - or other nut butter.
* 400ml can coconut cream
* 3 tablespoons brown sugar
* 2 large carrots, peeled and sliced into rounds
* 4 to 6 potatoes cubed into good sized chunks
* 250ml beef stock - you can use beef stock powder if you want a thicker sauce

METHOD
1. Brown the meat in a frypan using grape seed oil. Remove beef from the pan.
2. Add more oil to the pan and add the onions, stirring to soften them.
3. Add a sprinkle of each of the following … dried shallots, cinnamon, cumin, Chinese 5 Spice, cardamom, cloves.
4. Stir for a few minutes to bring out the flavours.
5. Stir in the jar of Massaman Curry Paste.
6. Keep stirring over the heat to bring out the flavours.
7. Add 1 tablespoon of red curry paste, 1 -2 tablespoons of the tamarind purée, and the 1-2 tablespoons of oyster sauce.
8. Place the beef into a slow cooker with 2 heaped spoonfuls of the peanut butter (or other nut butter). Add the onions and spice mix from the frypan.
9. Add the can of coconut cream and 3 tablespoons of brown sugar.
10. Add the carrots and potatoes.
11. Add 250ml beef stock and give it a good stir to mix.
12. Slow cook on HIGH 4 hours then turn down to LOW and cook until the beef and veggies are done.
13. Taste and adjust the flavour using the tamarind paste, brown sugar, and/or oyster sauce.

Serve with rice, paratha, and/or naan bread.

This recipe will feed a lot of people.  We always have left overs.  Using ziplock freezer bags, I make single portions and place into the freezer.  An easy meal to thaw out, put in a bowl and into the microwave in our Bowl Cozy for an easy dinner when you don't want to cook.
