Yellow Curry with Chicken

Another family favourite. This is an easy to make meal that all the family can enjoy.  It is a mild curry.
YELLOW CHICKEN CURRY
INGREDIENTS
*1 1/2 kg cubed chicken thighs
*2 onions - sliced
*Heaped teaspoon of garlic/ginger paste
*Heaped teaspoon of dried shallots
*Spice Mix: Cumin, sweet paprika, Chinese 5 Spice, turmeric
*230g jar of Valcom yellow curry paste 
*400ml can coconut cream
*heaped tablespoon Valcom Kaffir Lime Leaves- chopped finely
*2 tablespoons brown sugar
*250ml chicken stock
*1 yellow and 1 red capsicum - sliced into small strips
*A large handful of green beans
*If you want to make this a vegetarian dish you can omit the chicken and add a variety of veggies that you enjoy in a curry. 
METHOD
1. Brown the chicken and remove from the pan.
2. Brown the onions and add the garlic/ginger mix and shallots
3. Sprinkle on the cumin, sweet paprika, turmeric and a little bit of the Chinese 5 Spice
4. Add the jar of Yellow Curry Paste and the can of coconut cream
5. Add the chicken pieces back in with the Kaffir Lime leaves, brown sugar, chicken stock and capsicums and green beans.
6. Cook on low on the stove top for 1 hour - till the chicken is tender.
