Pumpkin Soup

Ingredients:
Pumpkin Kent x 1 large quarter, cut into small pieces
Brown onion x 1 roughly chopped
Coconut milk x 400ml
Olive oil x 1 tablespoon
Butter x 1 tablespoon
Chicken stock powder x 2 tablespoons
Veg stock powder x 1 tablespoon 
Curry powder x 1/2 teaspoon
Brown sugar x 1 tablespoon
Turmeric powder x 1/4 teaspoon
Method:
In a large pot
Combine olive oil, butter and onion - cook until onion is soft
Add
Curry powder
Brown sugar
Turmeric powder
Pumpkin
Mix chicken and vegetable stock powers with 750ml of water and add to the pot
Coconut milk
Simmer until pumpkin is soft
Can Add up to 250ml of extra water
Once cooked use food processor to blend until smooth.
Can Add small Can of corn - drained
Can Add shredded cooked chicken breast
